Tiramisu Brownies are a decadent fusion of rich chocolate brownies and classic tiramisu flavors. These indulgent treats feature a fudgy base topped with a velvety mascarpone cream infused with coffee and finished with a dusting of cocoa powder.   • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 large eggs
  • 90 g all-purpose flour, sifted
  • A pinch of salt
  • 1/2 tsp vanilla extract
  • 2 shots espresso or instant coffee
  • 250 g mascarpone cheese, at room temperature
  • 240 ml heavy cream
  • 50 g sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 2 tbsp espresso powder
  • Cocoa powder for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8 or 9-inch square baking tin with parchment paper.
  2. Melt chopped dark chocolate and butter in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  3. Stir in brown sugar and granulated sugar into the melted mixture.
  4. Add eggs one at a time, whisking until fully incorporated after each addition.
  5. Sift flour and salt over the batter and gently fold until combined.
  6. Pour the batter into the prepared tin and smooth the top. Bake for 25-30 minutes or until set.
  7. Remove from oven, poke holes in the brownies, and pour espresso over them. Let cool completely.
  8. Whisk together mascarpone cheese and heavy cream until just combined, about 30 seconds.
  9. Add espresso powder and powdered sugar; whisk for an additional 2-3 minutes until stiff peaks form.
  10. Spread mascarpone cream over cooled brownies and smooth the top.
  11. Dust with cocoa powder using a sieve.
  12. Carefully lift brownies from the tin by pulling on parchment paper and cut into squares.
