  • Salt and pepper to taste
  • 1 cup fresh spinach, chopped
  • 1 avocado, sliced
  • 4 large tortillas
  • Salsa, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onion and bell pepper until softened (about 5 minutes).
  2. Stir in minced garlic, turmeric, and cumin; cook for an additional minute until fragrant.
  3. Add crumbled tofu to the skillet; mix well with the vegetables and cook for about 5-7 minutes until heated through.
  4. Season with salt and pepper. Stir in chopped spinach; cook until wilted (about 2 minutes).
  5. Warm tortillas until pliable in a separate skillet or microwave.
  6. To assemble burritos: place tofu mixture in each tortilla's center, top with avocado slices and salsa.
  7. Fold sides of tortilla over filling and roll tightly from the bottom.
