Tofu Zoodle Pad Thai is a delightful, health-conscious twist on the classic Thai dish.   • 200 g firm tofu, cubed
  • 2 medium zucchini, spiralized
  • 1 medium carrot, julienned
  • 3 green onions, sliced
  • 3 tbsp soy sauce
  • 2 tbsp peanut butter
  • 1 tbsp sriracha sauce
  • 1 tbsp lemon juice
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • Roasted peanuts, for garnish
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat sesame oil in a skillet over medium heat. Add tofu cubes and sauté until golden brown, about 5 to 7 minutes. Remove tofu and set aside.
  2. In the same skillet, add green onions and carrot; stir-fry for 2 to 3 minutes until tender.
  3. Add zoodles to the skillet and cook for another 2 to 3 minutes, stirring occasionally.
  4. In a small bowl, whisk together soy sauce, peanut butter, sriracha, lemon juice, and sugar. Pour over the vegetable mixture.
  5. Return the tofu to the pan and mix well to coat all ingredients in the sauce. Cook for an additional 1 to 2 minutes until heated through.
  6. Serve hot, garnished with roasted peanuts, fresh cilantro, and lime wedges on the side.
