  • 2 ripe tomatoes, sliced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup basil pesto
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 220°C (425°F).
  2. Roll out the pizza dough on a baking sheet lined with parchment paper.
  3. Spread the basil pesto over the dough, leaving a 1 cm border.
  4. Arrange tomato slices evenly on top of the pesto.
  5. Sprinkle shredded mozzarella over the tomatoes.
  6. Create small wells in the cheese and crack an egg into each well.
  7. Season with salt and pepper to taste.
  8. Drizzle with olive oil.
  9. Bake for 12 to 15 minutes until the crust is golden and egg whites are set.
