  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup apple vinegar (for deglazing)

Instructions

  1. Heat the vegetable broth in a saucepan over low heat to keep it warm.
  2. In a large skillet, heat olive oil over medium heat. Sauté the onion until translucent (about 5 minutes), then add garlic and cook for an additional minute.
  3. Stir in Arborio rice and toast for 2-3 minutes.
  4. Deglaze with apple vinegar, stirring until mostly absorbed.
  5. Gradually add warm vegetable broth one ladle at a time; stir frequently until absorbed before adding more.
  6. After about 15-20 minutes, when rice is creamy and al dente, add drained diced tomatoes and cook for another 5 minutes.
  7. Remove from heat; stir in Parmesan cheese and basil. Season with salt and pepper to taste.
  8. Serve warm, garnished with additional basil if desired.
