  • 200 g spaghetti
  • 150 g turkey bacon, chopped
  • 2 large eggs
  • 100 ml crème fraîche
  • 50 g grated parmesan cheese
  • 2 garlic cloves, minced
  • 1 onion, sliced
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the spaghetti in salted boiling water according to package instructions. Reserve 100 ml of pasta water before draining.
  2. In a skillet over medium heat, add olive oil and sauté the onion and garlic until translucent.
  3. Add turkey bacon and cook until crispy.
  4. In a bowl, whisk together eggs, crème fraîche, parmesan, salt, and pepper.
  5. Combine drained spaghetti with the turkey bacon mixture in the skillet off the heat.
  6. Pour the egg mixture over the pasta, stirring quickly to coat evenly. Add reserved pasta water if sauce is too thick.
  7. Serve immediately topped with chopped parsley and extra parmesan if desired.
