  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes until softened.
  2. Add the minced garlic and cook for an additional minute, stirring frequently.
  3. Add the ground turkey to the pot, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  4. Stir in the chili powder, cumin, paprika, and oregano. Season with salt and pepper to taste.
  5. Add the crushed tomatoes, kidney beans, black beans, and chicken broth. Stir well to combine.
  6. Bring the chili to a boil, then reduce the heat to low. Cover and let it simmer for at least 30 minutes, stirring occasionally.
  7. Taste and adjust seasoning as needed. If the chili is too thick, add a bit more chicken broth to reach your desired consistency.
  8. Serve hot, garnished with your choice of toppings such as diced avocado, shredded cheese, chopped cilantro, or sour cream.
