  • 3 tablespoons milk
  • 1/2 cup onion, finely minced
  • 4 garlic cloves, pressed
  • 1 tablespoon fresh sage, chopped

  • 1 1/2 teaspoons Italian seasoning
  • 1/2 cup Parmesan cheese, grated
  • 1 large egg + 1 yolk
  • 1 1/2 pounds ground turkey (93/7 lean to fat)
  • 1 teaspoon salt (divided)
  • 1/4 teaspoon black pepper (divided)
  • Olive oil for frying and brushing
  • 2 tablespoons ghee or unsalted butter
  • 2 cups pumpkin puree (15 oz can + 1 cup)
  • 1 3/4 cups chicken stock
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup

Instructions

  1. Soak breadcrumbs in milk for 2–3 minutes. Combine with onion, garlic, sage, parsley, Italian seasoning, Parmesan, egg, and yolk.
  2. Gently mix in ground turkey, salt, and pepper until just combined. Form into meatballs and chill for 20–25 minutes.
  3. Sear meatballs in a heated skillet with olive oil until browned and cooked through (165°F internal temperature).
  4. Prepare sauce by sautéing onion and garlic in ghee/butter; stir in pumpkin puree, stock, remaining seasonings, and simmer for a few minutes.
  5. Whisk in cream and maple syrup; add meatballs to warm through.
  6. Serve over your choice of pasta or mashed potatoes.
