  • 1 head of cauliflower (about 600g)
  • 1/2 cup chickpea flour (60g)
  • 1/2 cup shredded vegan cheese (60g)
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup water (60ml)
  • 1/2 cup tomato sauce (120ml)
  • Assorted vegetables (bell peppers, onions, mushrooms, etc.)
  • 1/4 cup shredded vegan cheese (for topping) (30g)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Rinse and chop cauliflower into small pieces. Blend in a food processor until it resembles rice.
  3. In a large bowl, combine riced cauliflower, chickpea flour, shredded vegan cheese, garlic powder, oregano, salt, and pepper.
  4. Stir in water until a dough forms.
  5. Spread the dough onto the prepared baking sheet to form a pizza crust about 0.4 inches thick.
  6. Bake crust for 20 minutes or until golden and firm.
  7. Remove from oven and spread tomato sauce over the crust.
  8. Add your choice of vegetables and sprinkle remaining vegan cheese on top.
  9. Return to oven for another 10-15 minutes until cheese melts and veggies are cooked.
  10. Let cool slightly before slicing and serving.
