  • 1 can chickpeas (400 g), drained and rinsed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp flour (or chickpea flour for gluten-free)
  • Oil for frying
  • Pita bread or wraps
  • Lettuce
  • Tomatoes, sliced
  • Cucumbers, sliced
  • Tahini sauce or vegan yogurt sauce

Instructions

  1. In a blender, combine chickpeas, onion, garlic, parsley, cilantro, cumin, ground coriander, salt, pepper, and flour. Blend until a slightly coarse mixture forms.
  2. Shape the mixture into balls or patties.
  3. Heat oil in a skillet over medium heat and fry the falafels for about 4-5 minutes on each side until golden brown and crispy.
  4. While falafels are cooking, warm the pita or wraps.
  5. Fill each wrap with lettuce, tomatoes, cucumbers, and hot falafels.
  6. Drizzle with tahini sauce or vegan yogurt.
  7. Roll up the wrap and serve immediately.
