  • 250 g pasta (your choice)
  • 200 g firm tofu
  • 3 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 200 g cherry tomatoes
  • 2 tbsp olive oil
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Cook the pasta according to package instructions, then drain and set aside.
  3. In a bowl, mash the firm tofu with a fork. Stir in nutritional yeast, lemon juice, garlic powder, onion powder, salt, and pepper until creamy.
  4. In an oven-safe dish, toss cherry tomatoes with olive oil, then add cooked pasta. Gently fold in the tofu mixture.
  5. Bake for 25-30 minutes until tomatoes are tender and slightly roasted.
  6. Allow to cool for a few minutes and garnish with fresh basil before serving.
