  • 6 cups vegetable broth

  • 3 celery stalks, diced

  • 1 cup orzo or small macaroni
  • 1 cup chopped kale or spinach
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp fresh lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté for 5 to 7 minutes until tender.
  2. Stir in garlic and cook for an additional minute.
  3. Add lentils and vegetable broth; bring to a boil. Reduce heat and simmer for about 20 minutes until lentils are tender.
  4. Stir in pasta and cook for another 10 minutes until al dente.
  5. Add kale or spinach; cook for an additional 2 to 3 minutes until wilted.
  6. Season with oregano, thyme, salt, pepper, and lemon juice. Mix well.
  7. Serve hot, drizzled with extra olive oil if desired.
