Ingredients

  • 200 g kale, chopped
  • 50 g cashews, soaked and drained
  • 2 tbsp nutritional yeast
  • 1 tbsp Dijon mustard
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp lemon juice
  • 1 tbsp tahini
  • 1 tbsp apple cider vinegar
  • 100 ml water
  • Salt and pepper to taste
  • Whole grain croutons
  • 50 g cherry tomatoes, halved
  • 30 g pine nuts, toasted (optional)

Instructions

  1. In a blender, combine cashews, nutritional yeast, Dijon mustard, soy sauce, garlic powder, lemon juice, tahini, apple cider vinegar, and water. Blend until smooth and creamy.
  2. In a large bowl, add the chopped kale. Pour the dressing over the kale and massage it for 2–3 minutes to soften the leaves.
  3. Add halved cherry tomatoes, whole grain croutons, and toasted pine nuts (if using) to the kale.
  4. Gently toss to combine all ingredients.
  5. Season with salt and pepper to taste. Serve immediately and enjoy!
