  • 1 cup green lentils, rinsed and drained
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 carrot, grated
  • 1 can (14 oz) crushed tomatoes
  • 2 tbsp tomato paste
  • 2 tbsp soy sauce
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp sugar
  • ½ cup water
  • 4 vegan hamburger buns
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté the onion for about 5 minutes until translucent.
  2. Add garlic, red bell pepper, and carrot; cook for another 3 to 4 minutes until tender.
  3. Stir in lentils, crushed tomatoes, tomato paste, soy sauce, smoked paprika, cumin, sugar, and water. Mix well.
  4. Bring to a boil, then reduce heat and simmer for 25 to 30 minutes until lentils are tender and mixture thickens.
  5. Season with salt and pepper to taste.
  6. Serve the mixture on vegan hamburger buns while hot.
