Vegan Loaded Baked Potatoes are a delicious and hearty meal perfect for any occasion. Each potato is generously filled with a vibrant mix of black beans, corn, creamy avocado, and melty vegan cheese, topped with crispy Turkey Bacon and a dollop of vegan sour cream.   • 4 large potatoes
  • 1 cup cooked black beans
  • 1/2 cup corn
  • 1/2 cup shredded vegan cheese
  • 1 avocado, diced
  • 1/4 cup vegan sour cream
  • 1/4 cup chopped chives
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 4 slices Turkey Bacon, cooked and crumbled

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce each potato multiple times with a fork. Wrap them individually in aluminum foil.
  3. Place the wrapped potatoes on a baking sheet and bake for 45 to 60 minutes or until tender.
  4. While the potatoes bake, in a bowl, combine black beans, corn, paprika, salt, and pepper.
  5. Once baked, remove potatoes from the oven and let them cool slightly before slicing in half lengthwise.
  6. Gently mash the flesh of each potato with a fork to create space for toppings.
  7. Spoon the black bean mixture onto each potato half.
  8. Top with shredded vegan cheese, diced avocado, and crumbled Turkey Bacon.
