  • 1/2 cup raw cashews, soaked for 4 hours
  • 1/4 cup nutritional yeast
  • 1/4 cup plant-based milk (almond, soy, etc.)
  • 2 tbsp lemon juice
  • 1 tsp turmeric powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup breadcrumbs (gluten-free if desired)
  • 1 tbsp olive oil (for brushing)

Instructions

  1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Cook pasta according to package instructions, drain, and set aside.
  3. In a blender, combine soaked cashews, nutritional yeast, plant milk, lemon juice, turmeric, garlic powder, onion powder, salt, and pepper; blend until smooth.
  4. In a large bowl, mix cooked pasta with the creamy sauce until evenly coated.
  5. With slightly damp hands, form small balls or bites from the mixture and place on the prepared baking sheet.
  6. Top each bite with breadcrumbs and lightly drizzle with olive oil.
  7. Bake for 20-25 minutes or until golden brown and crispy.
  8. Allow to cool slightly before serving—enjoy warm or at room temperature.
