  • 200 g vegan Oreo cookies
  • 100 g melted margarine
  • 400 g vegan cream cheese
  • 200 ml coconut cream
  • 100 g sugar
  • 1 tbsp alcohol-free vanilla extract
  • 1 packet vegan gelatin
  • 50 ml hot water
  • 100 g crushed vegan Oreo cookies (for topping)

Instructions

  1. Preheat oven to 180°C (350°F). Crush the vegan Oreo cookies into fine crumbs.
  2. Combine the crushed Oreos with melted margarine until well mixed.
  3. Press the mixture firmly into the bottom of a springform pan to form the crust. Refrigerate for 30 minutes.
  4. In a large bowl, blend vegan cream cheese, coconut cream, sugar, and vanilla extract until smooth.
  5. Dissolve vegan gelatin in hot water and mix into the cream cheese mixture until combined.
  6. Pour the filling over the crust and smooth the top.
  7. Sprinkle remaining crushed Oreos on top of the cheesecake.
  8. Chill in the refrigerator for at least 4 hours until set.
  9. Carefully remove from the springform pan and serve chilled.
