  • 100 g fresh basil
  • 50 g pine nuts
  • 2 garlic cloves
  • 60 ml olive oil
  • 2 tbsp nutritional yeast
  • Salt and pepper to taste
  • 200 g cherry tomatoes, halved
  • 100 g arugula

Instructions

  1. Cook the gnocchi according to package instructions; drain and set aside.
  2. In a blender, combine basil, pine nuts, garlic, olive oil, and nutritional yeast. Blend until smooth, seasoning with salt and pepper to taste.
  3. In a large skillet over medium heat, add cooked gnocchi and pesto; gently toss to coat the gnocchi.
  4. Stir in cherry tomatoes and arugula until the arugula wilts and tomatoes soften slightly.
