Ingredients

  • 200 g seitan or marinated tofu
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 4 large tortillas or pita breads
  • 1 cup hummus
  • 1 tomato, diced
  • 1 cucumber, sliced
  • 1 carrot, grated
  • 1 small red onion, sliced
  • Handful of salad greens or arugula
  • Lemon juice to taste

Instructions

  1. In a bowl, combine seitan or tofu with olive oil, paprika, cumin, coriander, turmeric, garlic, salt, and pepper. Marinate for at least 30 minutes.
  2. Heat a skillet over medium heat and add the marinated seitan or tofu. Cook for 5 to 7 minutes until golden brown.
  3. While cooking, prepare the vegetables: dice the tomato, slice the cucumber and onion, and grate the carrot.
  4. Warm tortillas or pita breads in a skillet or microwave.
  5. Spread hummus on each tortilla or pita.
  6. Add cooked seitan or tofu followed by prepared vegetables and salad greens.
  7. Drizzle with lemon juice and roll tightly.
  8. Cut in half to serve immediately or wrap in parchment paper for later.
