  • 12 large button mushrooms
  • 1 cup cooked quinoa
  • 1/2 cup chopped walnuts
  • 1/2 cup vegan cheese
  • 1/4 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Remove stems from mushrooms and finely chop; set caps aside.
  3. In a skillet, heat olive oil over medium heat. Sauté chopped mushroom stems, garlic, and paprika for about 5 minutes until tender.
  4. In a large bowl, combine cooked quinoa, walnuts, vegan cheese, parsley, soy sauce, and sautéed mixture. Season with salt and pepper.
  5. Fill each mushroom cap with the mixture.
  6. Place stuffed mushrooms on a baking sheet, drizzle with olive oil, and bake for 20 minutes or until golden.
  7. Serve warm as an appetizer or side dish.
