  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1 cup chickpea flour
  • 1/4 cup nutritional yeast
  • 2 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon baking powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup water (or as needed)
  • Olive oil for frying

Instructions

  1. Combine grated zucchinis and salt in a large bowl; let sit for 10 minutes to draw out moisture.
  2. Squeeze excess moisture from the zucchini using a clean kitchen towel.
  3. Add chickpea flour, nutritional yeast, green onions, garlic, baking powder, black pepper, cayenne (if using), and parsley to the bowl; mix well.
  4. Gradually add water until the mixture reaches a batter-like consistency.
  5. Heat olive oil in a non-stick skillet over medium heat.
  6. Spoon a heaping tablespoon of the mixture into the skillet and flatten slightly.
  7. Cook for 3-4 minutes on each side until golden brown and crispy.
  8. Remove fritters and place on paper towels to absorb excess oil; repeat with remaining batter.
  9. Serve warm with your favorite dipping sauce or vegan yogurt.
