Instructions

  1. In a large bowl, combine grated zucchini, carrots, bell pepper, and green onions.
  2. In another bowl, whisk together flour, Parmesan cheese, baking powder, salt, black pepper, garlic powder, and onion powder.
  3. Add dry ingredients to the vegetable mixture along with eggs; mix until well combined.
  4. Heat oil in a skillet over medium heat.
  5. Drop spoonfuls of batter into the skillet and flatten slightly.
  6. Fry for about 3-4 minutes on each side until golden brown and crispy.
  7. Drain on paper towels and serve warm with dipping sauce or salad.
