  • 2 hoagie rolls
  • 1 cup sliced mushrooms
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 1 cup plant-based beef (or marinated tofu)
  • 1 cup shredded vegan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tbsp soy sauce

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and bell peppers; sauté for about 5 minutes until tender.
  2. Stir in mushrooms and cook until golden, about 3 minutes.
  3. Mix in plant-based beef and soy sauce; cook for an additional 3 to 4 minutes. Season with salt and pepper.
  4. Preheat oven to 350°F (180°C). Split hoagie rolls and place on a baking sheet.
  5. Fill each hoagie with the vegetable-beef mixture and top with shredded vegan cheese.
  6. Bake for 5 to 7 minutes until the cheese is melted and slightly golden.
  7. Remove from oven and serve hot.
