  • 1 can black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp soy sauce
  • 1 tbsp olive oil
  • 4 burger buns
  • 1 avocado, sliced
  • 1 tomato, sliced
  • Lettuce leaves
  • Sauce of your choice (ketchup or vegan mayo)

Instructions

  1. In a large bowl, mash the black beans until smooth but still slightly chunky.
  2. Stir in the cooked quinoa, breadcrumbs, onion, garlic, cumin, smoked paprika, salt, pepper, and soy sauce until well combined.
  3. Form the mixture into patties about 1 cm thick.
  4. Heat olive oil in a skillet over medium heat. Cook patties for about 4-5 minutes on each side until golden brown and crispy.
  5. Lightly toast the burger buns.
  6. Assemble by placing a patty on each bun and topping with avocado slices, tomato slices, lettuce leaves, and your preferred sauce.
  7. Serve immediately and enjoy!
