  • 2 cups watermelon, diced into 1-inch cubes
  • β…“ cup feta cheese, crumbled
  • 1012 mint leaves, sliced
  • ΒΌ red onion, thinly sliced
  • Extra virgin olive oil, for drizzling
  • Balsamic glaze, for drizzling

Instructions

  1. Optional: Marinate the red onion by placing it in a bowl and covering it three-quarters with apple cider vinegar and water until submerged. Let it sit for at least one hour.
  2. In a large bowl or platter, add arugula and top with watermelon cubes, crumbled feta, sliced mint leaves, and marinated red onion (drained).
  3. Just before serving, drizzle with olive oil and balsamic glaze to taste.
