  • 4 cups watermelon cubes (seeds removed)
  • 1 cup blueberries
  • ½ cup thinly sliced red onion
  • ¾ cup crumbled feta cheese
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons fresh lime juice (or lemon juice)
  • 1 tablespoon minced garlic
  • ¼ teaspoon salt
  • ¼ teaspoon freshly cracked black pepper
  • Fresh mint leaves (for garnish)

Instructions

  1. In a large bowl, combine the salad greens, watermelon cubes, blueberries, and red onion. Toss gently to mix.
