  • 1 personal-sized seedless watermelon (for the bowl)
  • 1 cup diced watermelon
  • 1 cup diced cucumbers
  • 1 cup diced bell peppers (any color)
  • ½ cup diced onion
  • ⅓ cup chopped fresh cilantro
  • 2 tbsp lime juice
  • 1 tbsp finely minced jalapeño pepper (optional)
  • ¼ tsp salt
  • ⅛ tsp black pepper

Instructions

  1. Lay the watermelon on its side and cut off the top quarter.
  2. Create a crosshatch pattern in the flesh without cutting through the rind.
  3. Cut around the flesh to separate it from the rind and scoop out the watermelon slices.
  4. Dice one cup of watermelon and set aside the rest for another use.
  5. In a bowl, combine diced watermelon, cucumbers, bell peppers, onion, cilantro, jalapeños, lime juice, salt, and black pepper.
  6. Mix well and adjust seasoning if necessary.
  7. Scoop the salsa into the hollowed-out watermelon bowl and serve immediately.
