Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, cooked and shredded
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • 4 cups chicken broth
  • 1 cup frozen corn
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sour cream
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, sauté the chopped onion in a bit of oil over medium heat until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.
  2. Stir in the cooked and shredded chicken, white beans, diced green chilies, ground cumin, chili powder, oregano, and chicken broth. Mix well to combine.
  3. Bring the mixture to a simmer and let it cook for about 20 minutes, allowing the flavors to meld together.
  4. After 20 minutes, add the frozen corn and cook for an additional 5 minutes.
  5. Stir in the shredded Monterey Jack cheese and sour cream until melted and creamy. Season with salt and pepper to taste.
  6. Serve the chili hot, garnished with fresh cilantro and lime wedges on the side for squeezing over the top.
