  • 2 medium zucchinis, grated
  • 1 cup crumbled feta cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup fresh parsley, chopped
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Olive oil for frying (about 4 tablespoons)

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
  2. In a bowl, mix the grated zucchini, feta cheese, flour, eggs, parsley, green onions, garlic, salt, and pepper until well combined.
  3. Heat olive oil in a frying pan over medium heat.
  4. Scoop about 2 tablespoons of the mixture to form patties and fry in hot oil for 3-4 minutes on each side until golden brown.
  5. Transfer cooked fritters to paper towels to absorb excess oil.
