  • 2 large zucchinis
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 large egg
  • 1/2 cup almond flour
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup tomato sauce
  • 1 cup assorted toppings (vegetables, meats, etc.)

Instructions

  1. Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Grate the zucchinis and place them in a clean towel to remove excess moisture. Twist the towel to squeeze out as much water as possible.
  3. In a large bowl, combine the drained zucchini, mozzarella cheese, parmesan cheese, egg, almond flour, oregano, salt, and pepper.
  4. Spread the zucchini mixture onto the prepared baking sheet, forming an even crust.
  5. Bake the crust for 15-20 minutes until golden and firm.
  6. Remove the crust from the oven and spread tomato sauce on top. Add your desired toppings.
  7. Return the pizza to the oven and bake for another 10-15 minutes until the cheese is melted and bubbly.
  8. Allow to cool slightly before slicing and serving.
