  • 2 cups shredded zucchini (about 2 large zucchini, squeezed)
  • 1 cup Panko breadcrumbs
  • 2 large eggs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup shredded Mozzarella cheese
  • 2 garlic cloves, minced
  • Salt and fresh cracked black pepper to taste

Instructions

  1. Grate the zucchini using a box grater and place it in a mesh bag or cheesecloth. Squeeze out excess moisture.
  2. In a mixing bowl, combine the squeezed zucchini with Panko breadcrumbs, eggs, Parmesan, Mozzarella, minced garlic, salt, and pepper.
  3. Heat a large pan over medium heat and add canola oil. Use an ice cream scoop to portion the mixture into the pan, shaping fritters gently with your hands.
  4. Cook fritters for 4-6 minutes on each side until golden brown, flipping them once to maintain their shape.
  5. If cooking multiple batches, add extra oil as needed between batches.
