  • 1 clove garlic (grated fine)
  • 1/3 cup bread crumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tablespoons chopped fresh chives (or 1 tablespoon dried)
  • 1 tablespoon chopped fresh parsley (or 1/2 tablespoon dried)
  • 1 teaspoon chopped fresh basil (or 1/2 teaspoon dried)
  • 1 teaspoon chopped fresh oregano (or 1/2 teaspoon dried)
  • Pinch of salt and pepper
  • Marinara sauce (for dipping)

Instructions

  1. Preheat the oven to 400°F. Lightly coat a baking sheet with olive oil or non-stick spray.
  2. Grate the zucchini using a box grater and wring out the moisture in a clean towel.
  3. Grate the garlic and add it to a medium bowl with the zucchini, egg, bread crumbs, Parmesan cheese, chives, parsley, basil, oregano, salt, and pepper. Mix well.
  4. Shape the mixture into small balls (about 1 tablespoon each) and place them on the prepared baking sheet.
  5. Bake for 15-18 minutes until golden brown. Serve warm with marinara sauce.
